Andy: What's the red-braised?
Lin: That has a dark color and a stronger soy sauce flavor. Sometimes it's a bit spicier, Szechwan style.
Andy: OK, I'll try that.
Lin: Now for the meat. Do you want whole pieces of beef, beef tendon, or the, um, 3)assorted parts.
Andy: Dare I ask, what are the assorted parts?
Lin: That would include some 4)organs, like 5)intestine and such.
Andy: OK, I'll go with the tendon, then.
Lin: You can have the 6)combo if you want. That has all three mixed together.
Andy: Thanks, but I'll stay away from that one.
